Job summary

Marcus Hotels & Resorts is seeking a Sous Chef for Grand Café at the Grand Geneva Resort & Spa in Lake Geneva, WI. You will continually evolve outlet menus, grow the team’s skills, maintain food and labor costs, and directly manage culinary and stewarding staff.

Collaboration with sales and operations will ensure guest expectations are exceeded. Grand Geneva, a AAA Four Diamond resort, offers a premier guest experience with multiple outlets and amenities.

Qualifications

• High school diploma or equivalent is required; culinary schooling preferred.
• 2–4 years of food management experience in multi-venue operations.
• Fluent in English for recipes, requisitions, and staff communication.
• Must be able to lift up to 200 lbs and work under high‑pressure environments.
• Able to work flexible hours, including nights, weekends, and holidays.

Responsibilities

• Assist in interviewing, hiring, training, supervising, scheduling, and coordinating culinary staff.
• Assist in evolving all outlet menus based on trends and availability.
• Engage with clients for event planning, budgeting, and execution.
• Provide necessary materials for line staff, including recipes and production schedules.
• Develop and maintain vendor relationships.
• Oversee quality control of all food leaving the kitchen and respond to issues.
• Ensure kitchen sanitation and cleanliness standards are met.
• Schedule employees based on forecasted volumes and business needs.
• Procure supplies according to volume and needs.
• Support Executive Chef duties in their absence.
• Perform other duties as assigned.
