Job summary

Fiesta Restaurant Group seeks a Director of Real Estate Development for Pollo Tropical, based in Miami, to manage the 100+ restaurant portfolio. You will lead LOIs, leases, renewals, and real estate expenses, coordinating with Finance, Legal, and Construction teams.

Candidate should have 5–8 years in retail real estate, Florida market experience, and a Business/Real Estate/Finance degree. Bilingual English/Spanish is a plus for cross-border partnerships.

Qualifications

• 5-8 years of retail real estate transaction or management experience.
• Direct experience in Florida real estate markets, with South Florida experience highly preferred.
• Bachelor’s degree with emphasis in Business, Real Estate or Finance.

Responsibilities

• Oversee LOIs, leases, estoppels, SNDAs, amendments, notices.
• Manage real estate-related expenses and CAM audits to support portfolio growth.
• Coordinate with Legal, Finance and Development teams for site approvals and transactions.
• Travel to market areas to evaluate proposed sites and existing restaurants.
