Qualifications

• Knowledge of large-scale food production and food service activities.
• Experience supervising employees and inmate workers.

Responsibilities

• Direct Meal Production: supervise cooking, baking, portioning, and assembly of meals.
• Special Dietary Compliance: ensure medical diets and religious meal trays are prepared and distributed.
• Equipment Maintenance: oversee safe operation and sanitation of heavy kitchen equipment.
• Direct Incarcerated Workers: train and evaluate inmate kitchen workers.
• Health and Safety Standards: enforce SERV Safe/HACCP and health regulations.
• Sanitation Management: supervise deep cleaning of prep zones and walk-in areas.
• Receiving and Storage: inspect deliveries and manage refrigeration and FIFO rotation.
• Inventory Tracking: monitor supplies and alert senior management to shortages.
• Documentation: complete daily shift logs, temperature charts, and related forms.
