Job description

Job Overview

To ensure proper service from the front line through quality control and maintaining proper sanitation levels.

Responsibilities
  1. Check all items against recipe cards, verify use records, and ensure food is presented efficiently and with quality.
  2. Monitor line setup before meal functions for maximum efficiency.
  3. Ensure equipment maintenance and adherence to the 'clean as you go' policy.
  4. Prepare food following recipe cards, standards, and from server dupe.
  5. Prepare ahead items without exceeding estimated needs.
  6. Label, date, and rotate perishables per SOP, maintaining proper temperatures.
  7. Check pars, determine prep needs, and set up lines accordingly.
  8. Identify out-of-stock items or shortages.
  9. Assist in buffet stocking.
  10. Store unused items properly, covering and dating perishables.
  11. Contribute to plans for controlling food costs and minimizing waste.
Qualifications

Education/Formal Training: High school diploma or equivalent.

Experience: 1-2 years in a related role.

Knowledge/Skills: Ability to work as part of a team, communicate effectively, and understand kitchen practices.

Physical Demands
  • Lifting, pushing, pulling, and carrying items up to 70 lbs.
  • Periodic climbing, bending, and full mobility required.
  • Continuous standing during shifts.
  • Moderate hearing and excellent vision essential.
Environment

Primarily inside (95%), with temperatures ranging from -10°F in freezers to over 100°F on the front line.
