Job summary

Blackberry Mountain in Walland, TN is looking for a Pastry Cook to support all aspects of dessert production and presentation for our restaurant operations.

You will work alongside the Pastry Chef, ensuring nightly dessert plating, bread baking, and inventory tasks are completed with care and precision. The role requires culinary education or equivalent experience and at least 1 year in pastry or restaurant settings.

Qualifications

• Culinary Education preferred and a minimum of 1-year experience in Restaurant and Pastry.
• Must be able to compose effective recipes.
• Must be able to communicate effectively with guests, managers, and team members.
• Must be able to convert recipes into larger and smaller batches, understanding weights and conversions.

Responsibilities

• Cleanliness and organization of bakeshop
• Communication of pastry supplies and equipment needs
• Rotation and monitoring of raw and finished products
• Following of dessert production rotation
• Completing weekly ice cream inventory
• Setting up pastry line for nightly dessert plating
• Bake bread fresh throughout nightly service
• Production of minor dessert components
• Deep cleaning station after service
• Wrapping and storage of pastry products
• Awareness of upcoming events
• Assist with in-room dining and Dogwood dessert production
• Individual bi-annual goals
