Job summary

Viceroy Hotels in Sun Valley, Idaho, seeks an AM Assistant Food & Beverage Manager to coordinate and supervise breakfast, lunch, and morning service across resort outlets. You will partner with leadership to uphold exceptional service standards and drive operational excellence in a luxury resort setting.

Reporting to the Restaurant General Manager, you lead front-of-house teams, oversee scheduling and payroll, train staff on SOPs, ensure compliance with liquor and health regulations, and deliver

Qualifications

• Previous food & beverage leadership experience in a hotel, resort, restaurant, or luxury hospitality environment preferred.
• Previous multi-outlet food & beverage experience strongly preferred.
• Supervisory or leadership experience required.
• Strong guest service, communication, leadership, and interpersonal skills.
• Ability to multitask, prioritize responsibilities, and remain organized in a fast-paced environment.
• Ability to professionally handle guest concerns and operational challenges with sound judgment and composure.
• Knowledge of restaurant operations, labor management, scheduling, payroll, and service standards.
• Strong operational leadership skills with the ability to lead both strategically and hands-on during service.
• Ability to effectively communicate, both verbally and in writing, with guests, employees, and leadership at all levels.
• Must maintain a positive, professional, and service-oriented demeanor at all times.
• Ability to stand and move throughout the entire shift.
• Ability to work a flexible schedule including mornings, evenings, weekends, holidays, and varying shifts based on operational demands.
• Must maintain confidentiality and professionalism in all guest and operational matters.
• Food Handler and alcohol service certifications required or ability to obtain upon hire.

Responsibilities

• Oversee daily operation of multiple F&B outlets in partnership with leadership.
• Supervise, coach, and develop front-of-house team.
• Maintain strong floor presence during service.
• Monitor quality, cleanliness, and standards across outlets.
• Respond to guest concerns and service recovery.
• Collaborate with F&B managers, culinary, and other departments.
• Assist with scheduling, labor management, payroll review, and productivity controls.
• Support forecasting, revenue management, and cost controls.
• Assist with hiring, onboarding, training, coaching, and performance management.
• Ensure SOPs, safety, and service standards are followed.
• Menu knowledge training, wine/beverage education, service development.
• Compliance with liquor laws and health standards.
• Monitor requisitions, inventory, and outlet supplies.
• Assist with operational reports and communications.
• Attend trainings and maintain punctuality and professional appearance.
• Maintain regular attendance and grooming standards.
• Ensure guest satisfaction through professionalism and attention to detail.
• Perform other duties as assigned by management.
