Job summary

HHM Hotels is seeking a Line Cook responsible for preparing food to recipe standards and maintaining daily kitchen operations. The role involves prep, portioning, and ensuring safety and sanitation throughout the shift.

The candidate will follow EarthView sustainability guidelines, rotate stock, manage line setup, and assist in controlling food costs while supporting a collaborative kitchen team.

Qualifications

• High school diploma or equivalent.
• At least 2 years of related experience.

Responsibilities

• Prepare food of consistent quality following recipes and production standards.
• Begin food items that are prepared ahead of time, without over- or under-preparing estimated needs.
• Date and rotate perishables, keep items at proper temperatures.
• Check pars for shift use, plan preparation, freezer pulls and line set-up; note shortages.
• Return unused items to storage with proper coverage and dating.
• Assist in correcting food-cost issues and controlling waste and usage per standards.
• Operate, maintain and clean kitchen tools and equipment.
• Follow EarthView sustainability guidelines and OSHA safety requirements.
