Job summary

Four Seasons Lanai is seeking a passionate Cook I to join Sensei Lanai dining operations on Lanai, Hawaii. You will independently manage a kitchen station, execute menu items, and uphold HACCP standards in a fast-paced, high-volume environment.

Qualifications

• Independently manage a kitchen station with recipes, portions and presentation.
• Proficient knife skills and multi-tasking in a fast-paced kitchen.
• Maintain HACCP and food safety standards across prep and service.
• Strong emphasis on mise en place and quality control.
• Experience in high-volume kitchen environments is preferred.

Responsibilities

• Independently manage a kitchen station, preparing and executing menu items to order while following recipes, portion control, and presentation standards
• Ensure proper mise en place, maintain quality control (taste, temperature, plating), and support efficient service flow through clear communication
• Uphold cleanliness, organization, and HACCP food safety standards while assisting with inventory, prep, and stock rotation
• Operate, clean, and maintain kitchen equipment safely and properly
• Monitor food levels and production needs, minimize waste, track shortages, and store perishable items according to policy
• Support and guide junior team members in a fast-paced, high-volume kitchen environment
