Job summary

The YMCA of San Diego County is seeking a Line Cook to contribute to high-volume menu production with precision and flavor across diverse meals. You will work in a fast-paced kitchen, upholding Cal/OSHA safety protocols and Cal/OSHA-related safety standards while delivering courteous service to participants and staff.

Shifts include mornings 5:30am-2:00pm or nights 12:30pm-9:00pm, with a focus on sanitation, portion control, and teamwork in a collaborative kitchen culture.

Qualifications

• High School Diploma or GED or equivalent training.
• 6+ months in general kitchen operations, including food handling, portion control, and use and care of basic equipment and utensils.
• Current ServSafe Food Protection Manager certification.
• Ability to obtain San Diego County food Handler Certification within 30 days of hire.
• Fingerprinting required by YMCA policies.
• CPR/AED and First Aid Certification from recognized organizations within 30 days of hire.

Responsibilities

• Prepares high-quality meals by following standardized recipes while ensuring flavor, texture, and presentation.
• Maintains HACCP compliance and safety protocols for a sterile kitchen environment.
• Evaluates food readiness using sensory checks and calibrated thermometers for safe temperatures.
• Assists with receiving and rotating deliveries using FIFO method.
• Operates convection ovens, mixers, slicers, ranges, and dishwashers safely.
• Collaborates with cooks and supervisors to adjust priorities during peak service times.
• Serves meals with attention to portion control and courteous service.
• Performs other duties as assigned.
