Felix Trattoria, part of Gusto 54 Restaurant Group, is seeking passionate individuals to join our team. We offer competitive compensation, including profit sharing opportunities and educational allowances for career advancement.

Felix Trattoria embodies seasonality, warm hospitality, and the culinary traditions of regional Italy, led by Chef Evan Funke, a storyteller, custodian of Italian tradition, and master of handmade pasta techniques.

Role and Responsibilities:

1. Prepare food to order as specified by the Chef, following recipes accurately and coordinating dish timing with other cooks.
2. Set up the station, ensuring all supplies are ready for service, and prep dish elements such as stocks and garnishes, including chopping vegetables and butchery.
3. Perform duties in accordance with California Health and Safety Standards, including sanitizing workstations, regular hand washing, marking and dating stored food, and ensuring dishes are prepared to correct temperatures.
4. Clean up the station, which involves sweeping, mopping, cleaning cooking surfaces, and storing or disposing of unused items.

Skills / Experience / Certification:

1. Strong knife skills.
2. 1-2 years of experience in a fine dining environment.
3. Knowledge of proper food handling for produce, meat, and fish.
4. Good judgment of quantity, quality, and production.
5. Understanding of temperature control and food safety.
6. Passion for the profession and a desire to learn.
7. Ability to multi-task, be a team player, work physically, and maintain a positive attitude.
8. Current Food Handler Certification and full COVID-19 vaccination.
