Job summary

Marcus Hotels & Resorts is seeking a Sous Chef for Grand Café at the Grand Geneva Resort & Spa in Lake Geneva, WI. You will lead culinary and stewarding staff, evolve outlet menus, manage food and labor costs, and collaborate with sales and operations to exceed client standards.

The Grand Geneva features multiple outlets, a AAA Four Diamond resort, and a strong tradition of service excellence. You will drive quality, mentor your team, and ensure compliance with health and safety standards.

Qualifications

• 2–4 years of food management experience in outlets and multi-venue operations.
• High school education; culinary schooling preferred.
• Proficient in safety and sanitation standards.
• English fluency for staff communication.

Responsibilities

• Supervise chefs, cooks, and staff, scheduling and training.
• Evolve menus across all outlets based on trends.
• Coordinate with sales and operations to meet client standards.
• Manage budgets, labor costs, and vendor relationships.
• Ensure kitchen sanitation and safety compliance.
• Perform Executive Chef duties in absence.
