Job Summary
The Lead Line Cook supports kitchen leadership in delivering an exceptional, high-volume dinner service. This hands-on role leads by example, ensuring dishes are prepared with precision, consistency, and urgency while keeping the line organized and supporting the culinary team.
Key Responsibilities
- Set up, inspect, and stock stations before service.
- Prepare menu items according to The Americano’s recipes, presentation standards, and quality expectations.
- Help coordinate the line, maintaining clear communication, ticket timing, and urgency.
- Train and support line cooks while reinforcing kitchen standards.
- Monitor food quality, portions, temperatures, seasoning, and presentation.
- Communicate effectively with chefs, kitchen staff, and the front-of-house team.
- Assist other stations as needed to maintain smooth service.
- Oversee evening breakdown, food storage, labeling, sanitation, and deep cleaning.
- Assist with prep, inventory, product rotation, receiving, and waste reduction.
- Follow and reinforce all food-safety, hygiene, sanitation, and workplace-safety requirements.
- Report equipment issues, shortages, and quality concerns to kitchen leadership.
Skills & Qualifications
- Two or more years of professional line-cook experience; leadership or upscale, high-volume dining experience is preferred.
- Strong knife skills and knowledge of grilling, sautéing, roasting, frying, and other cooking techniques.
- Ability to manage multiple tickets accurately during peak dinner service.
- Strong communication, organization, and problem-solving skills.
- Ability to coach teammates professionally and lead by example.
- Knowledge of food safety, allergen awareness, and proper food storage.
- Must have or obtain a current Arizona Food Handler Card.
- Available for evenings, late shifts, weekends, and holidays.
- Able to lift up to 50 pounds and work on your feet for extended periods.
