Job summary

Viejas Casino seeks a Food & Beverage Manager to oversee FOH operations, supervise Assistant Managers and team members, and align staffing, budgets and guest service with strategic goals. You will coordinate scheduling, hiring decisions, and ensure compliance with policies while driving performance and guest satisfaction.

You will work with chefs to coordinate floor and kitchen activities, train new staff, handle POS reconciliation and revenue, support promotions, and uphold health and safety

Qualifications

• High school diploma or GED required.
• Associate’s degree in hotel/restaurant management preferred.
• Food Handler’s Certificate required.
• RASS or TIPS certificate within 90 days of start.
• California RBS certification required on hire.
• 5+ years of food and beverage experience.
• 2–3 years of management/leadership experience.

Responsibilities

• Oversee FOH operations and staffing, ensuring service standards.
• Coordinate scheduling and labor hours to meet guest demand.
• Hire, train, and develop FOH team and supervisors.
• Monitor budgets, forecasts and costs, driving performance.
• Ensure compliance with health, safety, and company policies.
• Collaborate with chefs to coordinate floor and kitchen activities.
