Viejas Casino & Resort is seeking an Associate Sous Chef to assist the Sous Chef with day-to-day culinary operations across multiple kitchens, ensuring dishes are prepared and presented to high standards. This role requires strong leadership, training, and an eye for cost control while maintaining top quality for our guests.

You will guide the team, manage schedules, uphold HACCP compliance, and work closely with the culinary staff to optimize menus and production.

Qualifications

• High school diploma or GED required.

Responsibilities

• Assist the Sous with day-to-day operations of culinary teams in various kitchens; ensure efficient and profitable food service.
• Monitor team performance and identify areas for improvement.
• Oversee scheduling and staffing to ensure proper coverage.
• Train, coach, and document team members' guest service and technical performance.
• Ensure training programs meet department standards and follow-up on progress.
• Analyze kitchen labor/productivity and implement improvement strategies.
• Communicate advanced food knowledge, ingredients, prep, and cooking methods.
• Lead recipe conversions and adjust outputs to meet demand.
• Maintain high quality, taste, and waste control through regular tasting and seasoning adjustments.
• Follow HACCP procedures and hygiene standards; ensure cleanliness and safety.
