Job summary

Great Wolf Lodge in Naples, FL seeks a Food & Beverage Manager to oversee the daily operations of the lodge restaurant, bars, quick-service outlets, and banquets. You will ensure guest satisfaction, staff engagement, safety, and profitability in a dynamic resort environment.

You will uphold brand standards for food safety, train and schedule Pack Members, manage costs, and coordinate with culinary and purchasing teams to deliver high-quality meals and timely service across all venues.

Qualifications

• High School diploma or equivalent experience.
• Minimum 1+ years leadership experience in food & beverage.
• Flexible scheduling including nights, weekends and holidays.
• Experience driving business, revenue, cost control, guest satisfaction and employee engagement.
• Led teams to achieve or exceed goals.
• Strong attention to detail and time management.
• Knowledge of food & beverage preparation, service standards, guest relations, and etiquette.
• Familiarity with desktop/hospitality software (MS Office, payroll, POS).
• Successful background check and drug screen.
• Food safety and sanitation practices.

Responsibilities

• Oversees daily lodge restaurant and bar operations, including banquet functions, per brand guidelines.
• Assist in achieving operational objectives by contributing to strategic plans and audits.
• Hire, train, schedule, coach, and evaluate Pack Members; enforce policies and procedures.
• Ensure compliance with Great Wolf University training courses.
• Support staff in anticipating guest needs to maximize satisfaction.
• Coordinate with Culinary and Purchasing teams on food & supply standards and costs.
• Assist during peak times in all guest-facing roles across venues.
• Monitor inventory, cost controls and portion accuracy to minimize waste.
• Coordinate with HR on payroll activities and scheduling.
• Perform routine equipment maintenance and liaise for repairs.
• Lead safety and sanitation standards in line with local/national guidelines.
