The position requires experience in high-volume operations, expertise in menu development, and strong knowledge of food safety, cost controls, and quality presentation within a Compass Group service environment.

Qualifications

• A.S. or equivalent experience required.
• 3–5 years progressive culinary/kitchen management experience.
• Experience in high-volume, complex foodservice operations desirable.
• Hands-on chef experience required.
• Knowledge of food cost controls, quality, production, sanitation, and presentation.
• Proficient with Word, Excel, PowerPoint, Outlook, Email and Internet.

Responsibilities

• Plans regular and modified menus per guidelines.
• Follows standardized recipes and portioning; manages production worksheets and waste logs.
• Trains kitchen staff in food prep, safety, and sanitation.
• Maintains cleaning and maintenance schedules for equipment and areas.
• Keeps inventory within guidelines and ensures product availability.
• Decides on leftover food utilization within company guidelines.
• Ensures compliance with health and sanitation regulations and audits.
• Follows safety policies and participates in meetings and development programs.
