Job summary

Morrison Healthcare, a Compass Group USA company, seeks an Executive Chef to oversee hospital kitchen operations for a 300-bed facility. You will lead 20-25 team members, ensuring high standards of safety, sanitation, and food quality in line with corporate programs.

You will direct menu planning, training, and daily production to deliver patient meals that meet regulatory and client expectations, while managing cost controls and kitchen operations.

Qualifications

• A.S. or equivalent experience.
• 5+ years of progressive culinary/kitchen management experience.
• High volume, complex foodservice operations experience.
• Institutional and batch cooking experiences.
• Hands-on chef experience.
• Knowledge of food and catering trends with focus on quality, production, sanitation, food cost controls, and presentation.
• Experience with computers; Microsoft Office (Word, Excel, PowerPoint).
• Willingness to participate in client satisfaction programs/activities.
• ServSafe certification is highly desirable.

Responsibilities

• Plans regular and modified menus according to established guidelines.
• Follows standardized recipes, portioning and presentation standards; completes daily production worksheets and waste logs; tastes meals for quality.
• Trains kitchen staff in food preparation, safe handling, operation of equipment, sanitation to company and regulatory standards.
• Maintains cleaning and maintenance schedules for equipment, storage and work areas; ensures staff follow schedules.
• Maintains inventory of food and non-food supplies to stay within guidelines.
• Decides on utilization of leftover foods within company guidelines.
• Complies with health and sanitation regulations and audits.
• Follows safety policies and participates in meetings and training.
