Qualifications

• A.S. or equivalent experience.
• 5+ years progressive culinary/kitchen management.
• High volume, complex foodservice operations experience.
• Hands-on chef experience required.
• Knowledge of food trends, sanitation, costs, and presentation.
• Proficient in Microsoft Office tools (Word/Excel/PowerPoint).
• ServSafe certification desirable.

Responsibilities

• Plans regular and modified menus according to established guidelines.
• Follows standardized recipes, portioning and presentation standards; uses production worksheets and waste logs.
• Trains kitchen staff in food preparation, safety and sanitation per company standards.
• Maintains cleaning and maintenance schedules for equipment and areas; ensures adherence by staff.
• Maintains inventory within guidelines and ensures product availability as needed.
• Decides on utilization of leftover food within company guidelines.
• Complies with health, sanitation regulations and audits.
• Follows safety policies and participates in meetings and training.
• Participates in departmental meetings and staff development programs.
