Qualifications

• A.S. or equivalent experience.
• 5+ years of progressive culinary/kitchen management experience.
• High volume, complex foodservice operations experience.
• Hands-on chef experience required.
• Proficiency with Microsoft Office (Word, Excel, PowerPoint), Outlook and Internet.

Responsibilities

• Plans regular and modified menus according to established guidelines.
• Follows standardized recipes, portioning and presentation standards; uses daily production worksheets and waste log sheets.
• Trains kitchen staff in food preparation, safe handling, equipment operation, food safety and sanitation.
• Establishes cleaning and maintenance schedules for equipment, storage and work areas; ensures schedules are followed.
• Maintains inventory of food and supplies within guidelines; ensures availability of necessary products.
• Makes decisions on utilization of leftovers within company guidelines.
• Complies with health and sanitation regulations and internal audits.
• Follows safety policies and participates in departmental meetings and programs.
