Job summary

Amrit Ocean Resort is seeking a talented Line Cook to join our luxury culinary team. You will work under the Executive Chef on high-end, health-focused dishes in a Forbes Five-Star aspirant environment.

This role involves coordinating station setup, maintaining service pace, and delivering dishes to specification with precision and consistency in a serene resort setting.

Qualifications

• Minimum 3 years of culinary experience in an upscale or fine dining kitchen.
• Demonstrated ability to work kitchen station or shift independently.
• Strong knowledge of cooking techniques, plating standards, and kitchen operations.
• Ability to work a consistent schedule including weekends and holidays.
• Calm under pressure - able to work with team through high-volume dinner service with composure.

Responsibilities

• Coordinate kitchen station set-up and execution for service.
• Ensure station is properly set up, prepped, and ready before service begins.
• Manage ticket flow, expedite dishes, and maintain the pace and quality of service throughout the shift.
• Maintain a clean, organized, and fully compliant station always during the shift.
• Enforce food safety and sanitation standards — temperature logs, labeling, FIFO rotation.
• Conduct end-of-shift breakdown, cleaning, and prep setup for the following day.
• Report any equipment issues, supply shortages, or food safety concerns to the Chef de Cuisine immediately.
• Monitor prep levels throughout the shift and direct production accordingly to prevent shortages.
• Manage end-of-shift inventory and communicate any ordering needs to the Chef de Cuisine.

This is a hands-on position for a cook who is ready to own a shift and develop their skills in a Forbes Five-Star aspirant environment.

• Valid Florida Food Handler Certification (or ability to obtain within 30 days of hire)
• Ability to work a consistent schedule including weekends and holidays
• Calm under pressure - able to work with team through high-volume dinner service with composure

Preferred

• Previous experience in an upscale restaurant, hotel, resort, or luxury dining environment
• Familiarity with Forbes Five-Star or AAA Diamond service standards
