Job summary

Canteen Corrections is seeking a Corrections - Food Service Supervisor to manage the kitchen operations at Macomb County Jail. The role involves supervising inmates, coordinating menu production, and ensuring safe, sanitary service at all times.

Responsibilities include enforcing food safety standards, overseeing inventory, and maintaining accurate production records to meet nutritional and regulatory requirements.

Qualifications

• Must have knowledge of food safety and sanitation laws, regulations, and rules.
• Must be comfortable working in a correctional facility.
• Must be comfortable working alongside and supervising inmates.
• Must be flexible and able to multi-task.
• Must adhere to daily standards of operation and maintain documentation.

Responsibilities

• Review the master menu cycle to ensure correct production records and recipes.
• Verify daily menu items are prepped for the line and available in correct amounts.
• Label all items with name, date and meal; maintain production records.
• Delegate duties to inmates and supervise them in performance of tasks.
• Ensure sanitation, safety and security of inventory at all times.
• Monitor line for timely service and record temperatures of foods.
