Job summary

Canteen Corrections is seeking candidates to work in the kitchen of Macomb County Correctional Facilities. The Cook will oversee production, supervise inmates, and ensure meals are prepared safely and on time.

Required are knowledge of sanitation, ability to supervise in a correctional setting, and strong attention to detail. This is a full-time role with comprehensive benefits and steady hours.

• Knowledge of food safety, sanitation laws, regulations and rules.
• Experience working in a correctional facility.
• Experience supervising inmates.
• Ability to multi-task and maintain daily standards of operation.

• Able to adapt and follow safety procedures and sanitation standards.
• Maintain accurate production and inventory records.
• Know how to use standard operating procedures.

Responsibilities

• Review master menu cycle for correct production records and recipes.
• Verify daily menu items prepared for the line and available in correct amounts.
• Ensure items are labeled with name, date and meal.
• Delegate duties to inmates and supervise them.
• Monitor line for timely service and maintain sanitation, safety and security.
• Record temperatures for foods and monitor inventory controls.
• Check in daily orders and maintain equipment inventory.
• Maintain production records and ensure compliance with regulations.
• Prepare daily menu items and assist in planning.
• Assist management and participate in staff meetings and training.
