Certified Dietary Manager (Project Management)
This role involves directing and participating in the preparation and service of food that is safe, appetizing, and meets residents' needs in accordance with physicians' orders and approved menus. The manager maintains costs within budget guidelines, plans and assists in special meal functions, and supervises dietary personnel. Responsibilities include hiring, training, disciplining, and, when necessary, terminating staff, ensuring proper food storage and handling in compliance with regulations, updating diet orders, and assessing resident food preferences and allergies.
The manager prepares staff schedules, maintains a safe and sanitary kitchen environment, transmits food orders, and communicates menu changes to the dietitian. They participate in QA and IDT meetings, inspect dietary facilities, and conduct in-service training. The role also involves investigating injuries, ensuring regulatory compliance, coordinating with nursing and activities staff, and conducting nutritional assessments for residents at risk.
Supervisory duties encompass overall management of dietary staff. Qualifications include a high school diploma or equivalent, graduation from an approved dietary manager's course, and preferably one year of experience in a long-term care facility dietary department. Skills required include reading technical procedures, policy manuals, recipes, and effective communication. Mathematical, reasoning, and problem-solving skills are essential.
Certificates and licenses, such as PCC knowledge and ongoing education, must be maintained in good standing with the Department of Public Health. Physical demands include frequent standing, walking, reaching, and lifting up to 50 pounds, with occasional climbing and bending. The work environment is typically low to moderate noise, with reasonable accommodations available for disabilities.
