Executive & Management
Direct and participate in food preparation and service of food that is safe and appetizing and is of the quality and quantity to meet each resident's needs in accordance with physicians order in compliance with approved menus. Maintains cost and works to meet budget guidelines. Plans and assists in preparation and service of holiday and special meals and functions. Directs and supervises all dietary functions and personnel. Hires, orients, trains, disciplines, and when appropriate, terminates dietary employees. Ensures proper storage and handling of food and supplies, complying with current state and federal guidelines. Processes new diet orders and updates diet cards accordingly. Maintains sufficient staff to provide dietary services. Assesses resident food preferences and allergies. Prepares staff schedules and manages schedule changes. Maintains a safe, clean, and sanitary kitchen and storage areas. Coordinates food and supply orders, and communicates menu changes to the Dietitian. Participates in QA and IDT meetings. Checks trays for accuracy before delivery. Inspects the Dietary Department regularly for safety and sanitation. Provides in-service education for staff. Investigates and addresses on-the-job injuries, retraining staff as needed. Ensures compliance with all regulations. Coordinates dietary and nursing services. Completes monthly nutritional notes for residents at risk, conducts nutritional assessments, and promotes quality food service. Supervises dietary staff management and operations.
