Job summary

The Peninsula Chicago is seeking a guest-focused Bar Director to lead the cocktail, wine, and beverage programs across its signature outlets on Michigan Avenue.

You will design seasonal menus, standardize recipes, mentor bar teams, ensure compliance with liquor regulations and safety standards, and assist in staff scheduling and service oversight; the position offers a strong benefits package and a competitive salary in Chicago.

Qualifications

• 2+ years leadership in a Five-Star hotel restaurant
• In-depth knowledge of wines and spirits and 50 Best culture
• Fluent English; additional languages beneficial

Responsibilities

• Design, develop, and implement innovative cocktail, spirits, wine, and non-alcoholic beverage programs
• Create seasonal and signature beverage menus aligned with The Peninsula and guest expectations
• Standardize recipes, presentation guidelines, and quality controls across all departments
• Lead, mentor, and develop bartenders, bar managers, and beverage teams
• Ensure compliance with alcohol service regulations, licensing requirements, and health and safety standards
• Assist Z Bar in staff scheduling, task delegation, service supervision, reservations, and floor presence
• Utilize the POS and HOTsos systems as per policies and procedures in place

Key Accountabilities:

• Design, develop, and implement innovative cocktail, spirits, wine, and non-alcoholic beverage programs
• Create seasonal and signature beverage menus aligned with The Peninsula and guest expectations
• Standardize recipes, presentation guidelines, and quality controls across all departments
• Lead, mentor, and develop bartenders, bar managers, and beverage teams
• Ensure compliance with all alcohol service regulations, licensing requirements, and health and safety standards
• Assist Z Bar in staff scheduling, delegation of job tasks, monitoring and supervision of service, monitoring reservations and table assignment, and ensuring managerial floor presence
• Utilize the POS and HOTsos systems as per policies and procedure in place

General Requirements:

• Minimum of 2 years leadership experience in a three-meal period in a restaurant Five-Star hotel
• In depth understanding of various cuisine, wines, and pairings.
• Strong knowledge of wines, spirits, and 50 Best culture
• Ability to speak English fluently, additional languages would be highly advantageous.

The salary range for this role is $85,000-95,000 per year.
