The Peninsula Chicago is seeking a guest-focused Head of Mixology to lead our beverage program across a luxury, five-star property on Michigan Avenue. You will design innovative cocktails, wine and non-alcoholic offerings, while mentoring bartenders and ensuring top-tier service and compliance with health and safety standards.

Qualifications

• Minimum of 2 years leadership experience in a three-meal period in a restaurant Five-Star hotel.
• In-depth understanding of cuisine, wines and pairings.
• Relevant professional qualifications (Hospitality, Business, Marketing).
• Ability to speak English fluently; additional languages advantageous.

Responsabilités

• Design, develop, and implement innovative cocktail, spirits, wine, and non-alcoholic beverage programs.
• Create seasonal and signature beverage menus aligned with The Peninsula and guest expectations.
• Standardize recipes, presentation guidelines, and quality controls across all departments.
• Lead, mentor, and develop bartenders, bar managers, and beverage teams.
• Ensure compliance with all alcohol service regulations, licensing requirements, and health and safety standards.
• Assist Z Bar in staff scheduling, delegation of tasks, monitoring service and reservations, and floor presence.
• Utilize POS and HOTsos systems according to policy.

Job Description

Working with a talented team of Food & Beverage professionals, The Peninsula Chicago is seeking a guest-focused Head of Mixology.

• Work for a luxury Five-Star Five-Diamond property in the heart of Michigan Avenue, Chicago.

Key Accountabilities

• Design, develop, and implement innovative cocktail, spirits, wine, and non-alcoholic beverage programs
• Create seasonal and signature beverage menus aligned with The Peninsula and guest expectations
• Standardize recipes, presentation guidelines, and quality controls across all departments
• Lead, mentor, and develop bartenders, bar managers, and beverage teams
• Ensure compliance with all alcohol service regulations, licensing requirements, and health and safety standards
• Assist Z Bar in staff scheduling, delegation of job tasks, monitoring and supervision of service, monitoring reservations and table assignment, and ensuring managerial floor presence
• Utilize the POS and HOTsos systems as per policies and procedure in place

The salary range for this role is $80,000-100,000 per year.
