Job summary

The Biltmore Hotel in Miami is seeking a Banquet Captain to supervise banquet service staff before, during, and after events. You will ensure all contracted items are executed according to the banquet event order, and uphold BSOP procedures.

Responsibilities include coordinating with Catering Manager, supervising staff, ensuring correct uniform and setup per BEO, reviewing details with staff and client, and producing daily revenue paperwork, with long hours including weekends and holidays.

Qualifications

• High school diploma preferred.
• Minimum two years administration experience in an upscale service operation.

Responsibilities

• Report to work on time in proper uniform.
• Prepare, organize and supervise all planned banquet functions in a timely manner.
• Ensure service staff is in proper uniform in compliance with The Biltmore Employee Hand Book.
• Monitor efficiency, cleanliness and follow up with service standards.
• Ensure all ballrooms and meeting rooms are set up according to BEO and Biltmore Standards.
• Coordinate timing of the meal service with Stewarding and Kitchen staff.
• Communicate with Catering Manager to finalize all details with the event.
• Review the BEO with the service staff prior to the start of the event.
• Review times with the client prior to the start of the event.
• Ensure proper set-up, teardown and handling of all hotel equipment.
• Assign side work duties sheet to the service staff after each event.
• Generate a banquet check for each event and properly fill out a daily revenue recap at the conclusion of the day.
