Job summary

Crystal Mountain seeks a seasoned Banquet Chef to lead banquet operations, oversee kitchen staff in the Wild Tomato restaurant, and coordinate seasonal outlets. You will plan menus, manage food and labor costs, and collaborate with the Executive Chef to adapt offerings to demand.

This role requires 8+ years kitchen experience and at least 2 years in management, ServSafe certification, and strong Excel/office skills. Evenings, weekends, and holidays are required; bonus eligibility applies.

Qualifications

• Must have an Associate’s or Bachelor’s degree in Hospitality, Business, or Management.
• Minimum of 8 years kitchen experience with at least 2 years in a management role.
• ServSafe certification required; strong cost-control and inventory management abilities.

Responsibilities

• Execute all Crystal Mountain banquet functions.
• Plan and participate in menu development and manage food surpluses and leftovers.
• Estimate food consumption and requisition food and kitchen supplies.
• Review menus, price items, and analyze costs for food, labor, and overhead.
• Establish par levels and oversee purchase of kitchen items.
• Direct food portioning policy to control costs and coordinate staffing daily.
• Supervise kitchen staff and ensure timely production and service.
• Ensure proper food preparation, portion sizes, and garnishing per standards.
• Assist Executive Chef in hiring, training, and supervising culinary staff.
• Ensure staff certifications and training are up to date.
• Maintain recipe database via Food Trak inventory system.
• Uphold cleanliness, storage, and sanitation standards.
