Job summary

The Bakery Manager at Eataly oversees all bread production, including breads, pizza alla pala, rolls, focaccia and seasonal items. You will lead a team of Bakers, Pizza Makers, and an Assistant Manager in a 24-hour bakery, reporting to the Head Chef.

You will organize operations, hire and train staff, manage schedules and payroll, and monitor budgets to maximize profitability while upholding Eataly’s culinary standards and guest experience.

Responsibilities

• Organizes the store’s Bakery operations to maximize profitability while upholding the company’s mission, values, policies, quality, and guest experience standards.
• Builds and leads a high-performing team: sources and hires, effectively trains, motivates, evaluates, develops, and retains talent.
• Responsible for administrative tasks such as writing employee schedules, approving vacation and unpaid time, and submitting payroll.
• Reviews financial information such as sales/costs and monitors budget to ensure efficient operation and spending within the specified budget.
• Prepares bread products for restaurant and retail operations in accordance with Eataly’s authentic Italian recipes and quality standards.
• Maintains and nurtures natural yeast, local and organic flour, and naturally leavened products.
• Collaborates closely with store leadership to ensure all necessary parties are aware of daily bakery activities, including absences, schedule coverage and product availability.
• Communicates with the Head Chef and Head of Bakery Operations on new recipes for the bakery.
• Orders and monitors inventory of all ingredients and products for the bakery, including tracking and documenting daily transfers and waste in the appropriate system.
• Maintains a clean and sanitary food production area according to Department of Health standards.
• Addressing guest and employee incidents; documents, investigates, elevates incidents in collaboration with store leadership and HR, including employee terminations.
• Performs other duties as required or assigned
