Job summary

Insomnia Cookies is seeking a Bakery Operations Manager to lead a fast-paced Milwaukee bakery. You will hire, coach, and develop a diverse hourly staff, maintain cookie quality and guest service excellence, and drive sales while owning daily operations and inventory controls.

This hands-on leadership role requires a player-coach mindset, strong hospitality, and ability to manage peak late-night shifts. Growth opportunities and comprehensive benefits are included.

Qualifications

• 3+ years of management or leadership experience in restaurant, retail, hospitality, or another fast-paced customer-facing environment.
• Availability to work a schedule that reflects bakery needs, including 2–3 mid-to-late shifts Thu–Sun.
• Hands-on, player-coach leadership style with a willingness to jump in where needed.
• Track record of hiring, coaching, developing, and retaining great teams.
• Natural hospitality and commitment to delivering an exceptional guest experience.
• Ability to obtain required food safety certifications applicable to the location.

Responsibilities

• Own the day-to-day operation of your bakery, ensuring every shift is staffed, prepared, and set up for success.
• Maintain high standards for cookie quality, speed, accuracy, cleanliness, food safety, and bakery execution.
• Own scheduling and labor execution, balancing team needs with business needs.
• Manage ordering, inventory accuracy, product rotation, shrink, and bakery controls.
• Lead local marketing drops and in-store recognition programs to drive traffic and sales.
• Develop Shift Leaders who can lead great shifts and coach their teams.
