Job summary

MGM Grand, a premier luxury destination in Las Vegas, is seeking an Assistant General Manager for Luchini, its Italian dining concept. You will lead operational excellence, culinary passion, and a high-energy service culture under the guidance of the General Manager.

You will oversee daily operations, manage budgets, scheduling, HR, and guest relations to deliver a polished, seamless dining experience in a fast-paced environment.

Qualifications

• High School Diploma or GED required.
• 2+ years of prior relevant experience required.
• Must be 21 years of age or older.
• Previous experience managing employees under a collective bargaining agreement preferred.
• Previous experience in a Luxury, Fine-Dining, or similar High-Volume Italian restaurant setting preferred.
• Previous experience as a Manager in a Casino or similar resort setting preferred.

Responsibilities

• Lead and manage daily restaurant operations, budgets, labor productivity, scheduling, and inventory to drive short-term profitability.
• Assist with HR responsibilities including teamwork, coaching, recognition, hiring and succession planning, and compliance with policies and laws.
• Interact with guests to ensure satisfaction, address complaints, and manage feedback channels; coordinate with culinary team for seamless service.
