Qualifications

• Requires high school diploma or equivalent and ADA-approved dietetic training.
• Minimum 2 years supervisory experience in a hospital or skilled nursing setting.
• Knowledge of cost control and food management practices.

Responsibilities

• Interview patients/families at admission and as needed to obtain diet history and preferences.
• Assess and document nutritional needs of each patient and update care plans.
• Review regular and therapeutic diets and menus to ensure proper service.
• Counsel patients on dietary likes, dislikes, appetite and menus.
• Document patient cultural backgrounds that may affect food consumption.
• Record temperatures for freezers and walk-in refrigerators and ensure procedures are followed.
• Check stocks and stock food accordingly; place orders as needed.
• Store cleaning materials properly and ensure proper food safety standards.
• Prepare and store leftovers appropriately and serve nourishments per guidelines.
• Prepare beverages as requested and coordinate with staff for partner meals.
