Insomnia Cookies seeks a full-time, hourly Assistant Bakery Operations Manager (ABOM) for the Greenville, NC store at 116 E. 5th Street, Greenville, NC 27858. The ABOM role develops the next generation of Bakery Operations Managers, blending hands-on operations with talent development and team leadership.

The position acts as an extension of the BOM, capable of stepping into full bakery ownership when needed, and supports inventory, scheduling, coaching, and onboarding to uphold standards.

Qualifications

• 1+ year leadership experience in restaurant, retail, or hospitality operations.
• Strong operational discipline with attention to detail.
• Ability to coach and develop hourly team members.
• Comfortable working in fast-paced, high-volume environments.
• Ability to perform all bakery roles during peak business periods.
• Strong communication and problem-solving skills.

Responsibilities

• Execute core bakery operations including scheduling support, staffing coordination, inventory rotation.
• Maintain quality, cleanliness, food safety, and guest experience standards.
• Assist in ordering, inventory accuracy, and shrink control.
• Lead recruiting, onboarding, and training of new staff.
• Provide coaching and real-time performance feedback.
• Manage bakery operations independently in the BOM's absence.
• Collaborate with BOM and Area leadership to close operational gaps.
• Maintain continuity of operations during leadership transitions or staffing shortages.
