Grand Central Bakery in Portland, OR is seeking a dedicated Baker 1 to learn and produce high quality artisan loaves while maintaining FSMA compliance and production efficiency. This entry level role emphasizes teamwork and ongoing skill development within a fast-paced production setting.

You will work under the Production Shift Manager and Shift Lead, with Fri/Sat/Sun/Mon shifts, full-time status, and eligibility for overtime.

Qualifications

• Must be at least 18 years old.
• Must maintain a valid Food Handler's Card at all times and follow health department guidelines.
• Professional baking experience preferred.
• Regular attendance with weekend availability required.

Responsibilities

• Bake, Mix, Form, Fermentation, Proofing of all products.
• Understand use of all equipment on bread production floor.
• Maintain accurate counts and records.
• Meet quality and production pace expectations per Level 1 training.
• Follow FSMA guidelines and maintain food safety records.
• Quality control of product and report shorts to PIC.
• Record mix times and dough temperatures and document results.
• Communicate issues to Shift Lead/Manager promptly.
• Know bread product properties and describe differences confidently.
• Use checklists and training docs to ensure accurate results.
• Understand final product goals and impact on department finances.
