Job summary

M.AMIYA CATERING PTE. LTD. is seeking a skilled kitchen leader to manage operations, budgeting, food and labour cost control, forecasting and inventory.

The role requires overseeing daily culinary activities, maintaining high standards of quality, sanitation, and guest satisfaction in a busy Bangladeshi and Indian kitchen environment. You will train junior staff, ensure compliance with safety policies, and coordinate with teams to deliver authentic South and North Indian dishes while maintaining

Qualifications

• Diploma or degree required (educational qualification).
• Minimum 4-5 years of hands-on cooking experience in Bangladeshi and Indian kitchens.
• Experience in Bangladeshi/Indian restaurant or catering with high-volume service.
• Willingness to work weekends/public holidays and overtime.
• Experience cooking South Indian and North Indian dishes as listed.
• Hands-on experience with kitchen equipment and ability to control storage temps.

Responsibilities

• Manage operations, budgeting, food and labour costing, forecasting, stock control, resource planning, staffing, inventory and waste management.
• Direct and participate in food preparation and daily kitchen activities to meet required standards and specifications.
• Ensure adherence to food safety, quality, health and hygiene standards at all times.
• Check quality of raw and cooked foods to ensure standards are met.
• Contribute to training and support junior staff and trainees in development.
• Oversee kitchen cleanliness, hygiene and maintenance to uphold high standards.
