Job summary

AK RASOOL TRADERS PTE. LTD. in Singapore is seeking an experienced Assistant Head Chef to support the Head Chef in daily kitchen operations, ensuring authentic Indian cuisine, high quality, hygiene and consistent presentation.

You will supervise kitchen staff, plan daily prep, train juniors and monitor stock and costs, while maintaining safety standards in a fast-paced, customer-focused environment.

Qualifications

• Minimum 3 years of experience in an authentic Indian restaurant at supervisory level.
• Strong knowledge of Indian cuisine including tandoor, curries, biryani, breads and gravies.
• Ability to supervise kitchen staff and coordinate during busy service periods.
• Good understanding of food hygiene and safety practices.

Responsibilities

• Assist in managing day-to-day kitchen operations.
• Prepare and cook North Indian and South Indian dishes per recipes and standards.
• Ensure consistent food quality, taste, portioning and presentation.
• Plan daily food preparation and coordinate kitchen activities.
• Supervise chefs, cooks, and kitchen assistants during service.
• Train and mentor junior kitchen staff.
• Comply with food safety, hygiene and sanitation regulations.
• Monitor stock levels and assist in inventory management and ordering.
• Minimise waste and help control kitchen costs.
• Maintain cleanliness of equipment and workstations.
• Take charge in Head Chef's absence and support menu improvements.
