Job summary

PEER MOHAMMED PTE. LTD. in Singapore is seeking an experienced Assistant Head Chef to support the Head Chef in daily Indian kitchen operations. You will oversee kitchen activities, maintain high standards of quality, hygiene, and efficiency, and supervise staff during service.

The role requires strong knowledge of North and South Indian dishes, safe food handling, and leadership to mentor junior cooks. Salary is commensurate with experience and growth opportunities are offered.

Qualifications

• Min 3 years as Assistant Head Chef or equivalent in an authentic Indian restaurant.
• Strong knowledge of Indian cuisine: tandoor, curries, biryani, breads, gravies.
• Ability to supervise kitchen staff and coordinate food preparation during busy service.
• Good understanding of food hygiene, sanitation, and workplace safety practices.

Responsibilities

• Assist Head Chef in day-to-day kitchen operations.
• Prepare and cook North Indian and South Indian dishes according to recipes and standards.
• Ensure consistency in quality, taste, portioning, and presentation.
• Assist in planning daily food preparation and coordinating kitchen activities.
• Supervise and guide chefs, cooks, and kitchen staff during service.
• Support Head Chef in training and mentoring junior staff.
• Ensure all food is prepared in accordance with safety regulations.
• Monitor food quality, freshness, and stock levels.
• Assist in inventory management, stock rotation, and receiving supplies.
• Minimise food wastage and help control kitchen costs.
• Maintain cleanliness of equipment and workstations.
• Take charge in Head Chef's absence.
• Collaborate to improve menu offerings and efficiency.
