APM PTE. LTD. in Singapore seeks an experienced Assistant Head Chef to support the Head Chef in daily kitchen operations, overseeing prep, ensuring consistency in taste and presentation, and managing staff during service.

Qualifications

• Minimum 3 years of experience as Assistant Head Chef or similar in an authentic Indian restaurant.
• Strong knowledge of Indian cuisine including tandoor, curries, biryani, breads and gravies.
• Ability to supervise kitchen staff during busy service periods.
• Good understanding of food hygiene, sanitation and workplace safety.
• Experience with inventory control and food cost management is an advantage.
• Able to work efficiently under pressure in a fast-paced kitchen.
• Strong organisational skills and teamwork.

Responsibilities

• Assist the Head Chef in managing day-to-day kitchen operations.
• Prepare and cook authentic North Indian and South Indian dishes per recipes and standards.
• Ensure consistency in food quality, taste, portioning, and presentation.
• Plan daily food preparation and coordinate kitchen activities.
• Supervise and guide chefs, cooks and kitchen staff during service.
• Train and mentor junior kitchen staff.
• Maintain food safety, hygiene and sanitation regulations.
• Monitor food quality, freshness and stock levels.
• Assist in inventory, stock rotation, ordering and receiving of supplies.
• Minimise wastage and help control kitchen costs.
• Ensure cleanliness of equipment and workstations.
• Take charge in Head Chef's absence and support menu improvements.
