Aoki in Singapore is seeking an Assistant Sushi Chef to join our Japanese fine dining team. The successful candidate will support the Head Chef and Sushi Chef in daily food preparation, ensuring high standards of quality, presentation, hygiene, and kitchen operations.

Key duties include sushi preparation, ingredient handling, maintaining cleanliness and safety, and collaborating with the kitchen team to deliver exceptional service.

Qualifications

• Minimum 2 years of experience in a Japanese fine dining restaurant.
• Friendly, customer-focused attitude and strong communication skills.
• Willingness to work a 6-day week including weekends and public holidays.

Responsabilités

• Sushi preparation: Assist in preparing sushi, sashimi, nigiri, maki, and other Japanese dishes according to the restaurant's standards.
• Ingredient preparation: Handle, clean, cut, and prepare fresh seafood and other ingredients while maintaining quality and freshness.
• Kitchen operations: Support the Sushi Chef in daily kitchen operations, including mise en place, food preparation, and service.
• Quality control: Ensure consistency in food quality, portioning, and presentation.
• Inventory management: Assist in receiving deliveries, stock rotation, proper storage, and monitoring ingredient wastage.
• Hygiene & safety: Maintain a clean and organised workstation and comply with food safety and hygiene regulations.
• Teamwork: Work closely with the kitchen team to ensure smooth and efficient service.
