Aoki in Singapore is seeking an Assistant Sushi Chef to support the Head and Sushi Chef in daily food preparation, ensuring high standards of quality, presentation, hygiene and kitchen operations. You will help prepare sushi, sashimi, nigiri, maki, and other Japanese dishes, handle ingredients, maintain cleanliness, and work closely with the kitchen team to ensure smooth service.

Candidates should have at least 2 years' experience in a Japanese fine dining setting and be prepared for a 6-day

• Minimum 2 years of experience in a Japanese fine dining restaurant.
• Friendly, customer-focused attitude with strong communication skills.
• Well-organized, reliable and able to maintain cleanliness.
• Willingness to learn and adapt in a fast-paced environment.
• Availability to work a 6-day week including weekends and public holidays.

Responsabilidades

• Sushi preparation: assist in preparing sushi, sashimi, nigiri, maki and other dishes.
• Ingredient preparation: clean, cut and portion seafood and ingredients while maintaining quality.
• Kitchen operations: support daily operations including mise en place, prep, and service.
• Quality control: ensure consistent portioning and presentation.
• Inventory management: assist with deliveries, stock rotation and storage.
• Hygiene & safety: keep the workstation clean and comply with food safety rules.
• Teamwork: collaborate with the kitchen team for smooth service.
