Job summary

Madeira West Coast Hotel on Madeira’s west coast seeks a Commis de Cuisine / Assistant Cook (m/f/d) to join a small, dedicated kitchen team. You will work with traditional Madeiran and international dishes, using seasonal and regional ingredients, under the Head Chef’s guidance.

Applicants should have practical kitchen experience, be reliable, and enjoy good food. Portuguese language is required; good English is a plus and German is welcome but not required.

Your next kitchen could be on Madeira. International guests, fresh regional produce, ingredients from the hotel's own garden and the Atlantic Ocean just outside the door.
For a privately owned 4-star country hotel on Madeira's west coast, we are looking for a new team member to join the kitchen.
The hotel is personally managed, internationally oriented and enjoys exceptionally strong demand, with bookings already reaching far into future seasons.
Earlier this year, we successfully recruited the hotel's Head Chef. Now the kitchen team is growing again.
We are looking for a Commis de Cuisine / Assistant Cook (m/f/d) who enjoys good food, an international environment and perhaps also the idea of making Madeira part of everyday life.
What you can expect
The kitchen combines traditional Madeiran cuisine with international dishes, mainly tailored to guests from Central Europe.
You will work closely with the Head Chef and the existing kitchen team and support them with:

• preparing and cooking dishes
• mise en place and daily kitchen organisation
• working with fresh, seasonal and regional ingredients
• preparing changing menus for international guests
• maintaining quality and hygiene standards
• keeping kitchen operations structured, clean and efficient
  

We are not looking for culinary showmanship.
What matters is solid kitchen experience, reliability, teamwork and genuine enjoyment of good food.
What makes this hotel different
Many ingredients come directly from Madeira and local producers, including fish, meat, fruit, vegetables and typical island products.
Herbs, bananas, fruit and vegetables are partly grown in the hotel's own garden.
The hotel also follows a strong sustainability approach and holds Travelife Gold certification, with regional sourcing, responsible use of resources and sustainable hotel operations forming part of daily practice.
And then there is the location.
The hotel sits quietly above the coast near Calheta, surrounded by vineyards and nature. The Atlantic, mountains, levadas and hiking trails are not part of a holiday brochure here. They are simply part of life after work.

Salary: €21,000–25,000 gross per year, depending on experience and qualification
Relocation support: Assistance with finding local accommodation if you are not yet living on Madeira
The salary is positioned slightly above the average local income level on Madeira.
What you should bring
You could be a good fit if you already have experience in a professional kitchen and enjoy working in a small, personal team.
We are looking for:

• practical experience in a professional kitchen or hospitality environment
• a reliable and structured way of working
• genuine interest in fresh ingredients and good food
• willingness to make a longer-term commitment on Madeira
• Portuguese language skills
• at least good English skills
  

German is a welcome additional skill, but not a requirement.
Formal culinary training is an advantage, but it is not the only thing that matters. Practical ability, attitude and reliability are just as important.

We already know the hotel and the people behind it from successfully recruiting the Head Chef earlier this year.
Now the team is expanding further because of the hotel's strong development and very high long-term occupancy.
This is therefore not a short-term vacancy created by an urgent staffing gap.
