Reca Resort Inc. in the Philippines is seeking a Kitchen Steward / Helper to support our food and beverage operations. The role focuses on keeping dishware, glassware, cookware, and kitchen facilities clean and sanitized, with basic food preparation assistance during peak dining hours.
You will work as part of a dynamic team in a resort setting, maintaining sanitation, assisting line cooks, and helping with waste management and safety compliance.
The Kitchen Steward / Helper is essential to maintaining smooth kitchen operations at our resort. Primary responsibilities focus on keeping dishware, glassware, cookware, and kitchen facilities clean and sanitized. Additionally, this role provides basic food preparation assistance to the culinary team during peak dining hours or banquet services, making it a dynamic support position within our food and beverage operations.
1. Dishwashing & Sanitation
Operate high-volume commercial dishwashing machines, loading and unloading items efficiently during peak service hours.
Scrape, rinse, and manually wash heavy cookware, pots, pans, and large kitchen utensils using a 3-compartment sink setup.
Inspect all cleaned items for spotlessness, chips, or damage before returning them to service areas.
Sort, stack, and transport clean dishware, glasses, silverware, and cooking gear back to designated kitchen stations and banquet areas.
2. Basic Food Preparation (As Needed)
Assist line cooks and prep chefs with basic food prep tasks, such as washing, peeling, chopping, and slicing vegetables and fruits.
Help assemble simple food items, prep garnishes, or package salad components during rush periods or banquet setups.
Portion basic ingredients and prep simple mis-en-place according to chef specifications and food safety standards.
3. Kitchen & Dish Pit Maintenance
Maintain a clean, organized, and dry work area in the dish pit to prevent slip-and-fall hazards.
Sweep, mop, and squeegee kitchen floors, walk-in coolers, and dishwashing areas throughout and at the end of every shift.
Disassemble, clean, and reassemble dishwashing equipment at the end of the day according to health and safety standards.
4. Waste Management & Support
Empty, clean, and re-line trash cans, recycling bins, and compost containers continuously.
Safely handle, store, and dilute cleaning chemicals according to chemical safety guidelines (SDS standards).
Assist with receiving, unloading, and storing incoming food and supply shipments using FIFO (First In, First Out) guidelines.
Physical Requirements:
Ability to stand, bend, reach, and lift up to 25 kg (50 lbs) regularly.
Comfortable working in a fast-paced, warm, and humid kitchen environment.
Flexibility: Willingness to work flexible hours, including weekends, evenings, holidays, and split shifts based on resort occupancy.
