Job summary

Fairmont Makati in Manila is seeking an experienced Stewarding Leader to oversee daily operations, uphold luxury standards and drive sanitation and cost-control across the department. You will lead a large Stewarding team, ensure HACCP and hygiene compliance, manage inventories, budgets, and deliver flawless service aligned with the hotel's premium brand.

The role requires strong leadership, meticulous attention to quality, and ability to adapt to a fast-paced luxury hotel environment.

Qualifications

• Experience leading large Stewarding teams in luxury hotel operations.
• Strong knowledge of hygiene, sanitation, food safety, HACCP and stewarding operations.
• Proven budget management and cost-control capabilities.
• Excellent communication, leadership, and problem-solving skills.

Responsibilities

• Oversee daily Stewarding operations, ensuring cleanliness, sanitation, hygiene and kitchen readiness.
• Lead and develop the Stewarding team while upholding luxury service and safety standards.
• Maintain high hygiene standards through regular inspections and quality controls.
• Oversee inventory, storage, care and presentation of china, glassware, cutlery, and equipment.
• Conduct inventories, monitor breakage, and implement cost-control and loss-prevention measures.
• Manage the Stewarding Department’s budget, payroll, and operating expenses.
• Champion waste-management and sustainability aligned with property commitments.
• Maintain flexible availability to support operational requirements.

Job Description

• Oversees daily Stewarding operations, ensuring impeccable standards of cleanliness, sanitation, hygiene, and kitchen readiness.
• Leads and develops the Stewarding team, ensuring adherence to luxury service, health and safety, and hotel standards.
• Uphold the highest standards of hygiene and sanitation through regular inspections and meticulous quality controls
• Oversee the inventory, storage, care, and presentation of china, glassware, cutlery, and operating supplies and equipment
• Conduct regular inventories, monitor breakage trends, and implement effective cost-control and loss-prevention measures
• Manage the Stewarding Department’s budget, payroll, operating expenses, and overall financial performance.
• Champion responsible waste-management practices and sustainability initiatives in alignment with the property’s environmental commitments.
• Maintain flexible availability to support operational requirements and ensure seamless service delivery.

Qualifications

• Bachelor’s degree in Hospitality Management or a related field, with experience in luxury hotel operations preferred.
• Minimum of five (5) years of progressive Stewarding leadership experience, including managing large teams and driving operational excellence.
• Strong leadership, organizational, communication, and problem-solving skills, with a proven ability to maintain high service and quality standards.
• Comprehensive knowledge of hygiene, sanitation, food safety, HACCP, and stewarding operations, with proficiency in Microsoft Office applications and budget management.
