Culinary Preparation & Cooking
Prepare, season, and cook a wide range of traditional Filipino dishes, including stews (Adobo, Kare-Kare, Sinigang), grilled items (Inasal, Liempo), deep-fried specialties (Crispy Pata, Lumpia), and regional specialties.
Execute traditional cooking techniques such as gisa (sautéing), laga (boiling), inun-unan/paksiw (vinegar stewing), and slow-cooking meats to optimal tenderness.
Maintain consistency in portion sizes, presentation, and flavor balance according to company recipes and specifications.
Handle specialized Filipino pantry items and aromatics (e.g., bagoong, annatto/atsuete, gata, patis, calamansi, sampalok).
Kitchen Operations & Station Management
Manage mise en place (prep work) efficiently prior to service to ensure quick ticket times during peak operational hours.
Operate standard commercial kitchen equipment safely, including gas burners, deep fryers, flat-top grills, and rice cookers.
Monitor food inventory at the station, report shortages to the Head Chef/Kitchen Supervisor, and minimize food waste through proper portion control and ingredient rotation.
Food Safety, Sanitation & Quality Control
Strictly follow First In, First Out (FIFO) inventory rotation procedures for all raw meats, seafood, produce, and cooked items.
Maintain clean and organized workstations in compliance with hazard analysis and local health department sanitation standards.
Ensure proper food holding temperatures (hot holding and cold storage) to prevent contamination and spoilage.
Culinary Knowledge: Mastery of core Filipino cooking methods, traditional ingredient pairings, and regional sauce bases.
Skills: Excellent knife skills, ability to multitask under pressure, strong attention to detail, and good communication skills.
Formal culinary degree or vocational certification in Commercial Cooking / Culinary Arts.
Hands-on expertise in regional Filipino dishes (e.g., Kapampangan, Ilocano, Bicolano, or Visayan culinary traditions).
