This is a full-time position that plays a crucial role in our culinary operations, overseeing the pastry section and ensuring the delivery of exceptional baked goods and desserts to our guests. As Chef de Partie Pastry, you will be responsible for maintaining the highest standards of quality, creativity, and consistency in all pastry production, whilst leading and mentoring junior pastry staff. This role is essential to our commitment to providing world-class dining experiences across our hospitality venues.
Oversee all pastry production and ensure compliance with recipes, portion sizes, and presentation standards
Prepare and produce a diverse range of pastries, breads, cakes, desserts, and confectionery items according to established specifications and seasonal menus
Train, supervise, and mentor pastry team members, ensuring adherence to food safety and hygiene protocols
Manage inventory of pastry ingredients and supplies, monitoring stock levels and placing orders as needed
Develop and test new pastry recipes and dessert creations to enhance menu offerings
Maintain and operate pastry equipment, ensuring proper maintenance and cleanliness at all times
Work collaboratively with the head chef and other kitchen departments to ensure seamless service delivery
Uphold all food safety, sanitation, and health regulations in the pastry kitchen
Monitor food costs and assist in budgeting for the pastry section
Formal culinary training or qualification in pastry arts from a recognized institution
Minimum 3-5 years of professional experience in pastry kitchens, preferably in a fine dining or upscale hospitality setting
Proven expertise in producing high-quality pastries, breads, desserts, and confectionery items
Strong knowledge of pastry techniques, including lamination, fermentation, decoration, and plating
Excellent attention to detail and commitment to maintaining consistent quality standards
Demonstrated leadership and supervisory experience with the ability to inspire and motivate a team
Proficiency in reading and interpreting recipes and the ability to scale recipes for large-scale production
Sound understanding of food safety, hygiene, and sanitation regulations
Creative flair and passion for innovation in pastry design and presentation
Strong organizational and time-management skills, with the ability to work efficiently under pressure
Excellent communication skills and the ability to work collaboratively within a professional kitchen environment
