Job summary

COREcruitment Ltd is seeking a Sous Chef in Amsterdam to lead a high-volume Mediterranean kitchen. You will support the Head Chef, manage a diverse team, and ensure every plate meets quality and speed standards.

Ideally you bring 3+ years of sous-chef experience, strong leadership, and a passion for hospitality. HACCP Level 2 and flexibility for evenings and weekends are required to thrive in this busy setting.

Qualifications

• 3+ years of Sous Chef experience in high-volume Mediterranean or quality-focused restaurant.
• Strong leadership presence, calm and organised during busy service.
• Solid knowledge of Mediterranean ingredients, techniques and flavours.
• Up-to-date HACCP Level 2 minimum food safety certification.
• Hands-on, no-ego attitude with passion for hospitality.
• Willingness to work evenings, weekends and holidays.

Responsibilities

• Support Head Chef in running daily kitchen operations in a fast-paced setting.
• Lead and motivate a diverse brigade, ensuring quality and speed on each plate.
• Own sections, pass and service during shifts and lead in Head Chef's absence.
• Contribute to menu development and seasonal changes with input.
• Monitor food safety, HACCP compliance, and hygiene standards at all times.
• Manage stock, ordering and waste with Head Chef; train junior chefs.
