Qualifications

About the role
Lotuss Stores (Malaysia) Sdn Bhd is seeking an experienced Manager Fresh – Bakery to join our team in Puchong, Selangor. This is a full-time position responsible for overseeing the overall operations of the Bakery department, including product quality, freshness, presentation, availability and profitability. As Manager Fresh – Bakery, you will lead and manage the bakery team, oversee daily operations, monitor production and merchandising standards, control inventory and wastage, and ensure compliance with food safety and hygiene requirements. You will also play a key role in driving sales and delivering a high-quality bakery experience that meets our customers’ expectations.

Key responsibilities

• Oversee the daily operations of the Bakery department, ensuring smooth production, merchandising and store operations
• Manage inventory levels, stock rotation and waste reduction to maximize profitability and minimize shrinkage
• Ensure all bakery products meet quality, freshness and presentation standards to drive sales
• Monitor food safety, hygiene and cleanliness standards in compliance with local regulations and company policies
• Train, supervise and motivate bakery staff to deliver excellent product quality and customer service
• Analyze bakery sales performance and implement strategies to achieve departmental targets and KPIs
• Manage supplier relationships and coordinate deliveries to ensure consistent availability of bakery ingredients and products
• Monitor product pricing, labelling, promotions and merchandising to ensure accuracy and compliance with company standards
• Address customer feedback and complaints professionally to maintain customer satisfaction
• Report to Store Management on bakery performance, challenges and opportunities for improvement

What we're looking for

• Minimum 3–5 years of experience managing bakery operations in a retail environment, preferably in a supermarket or hypermarket setting
• Proven track record in achieving sales targets and managing profitability within bakery operations
• Strong knowledge of bakery products, including product quality, freshness, production and storage requirements
• Good understanding of food safety, hygiene and food handling standards relevant to bakery operations
• Strong leadership and team management skills, with the ability to motivate, coach and develop staff
• Strong organisational and time management skills with the ability to manage multiple priorities effectively
• Proficiency in retail management systems and point-of-sale technology
• Flexibility to work retail hours, including weekends and public holidays, as required
• Excellent communication and interpersonal skills
