Responsibilities

• Overssee daily biscuit production and ensure recipe, weight, size, texture, and packaging compliance.
• Coordinate with planning to align schedules with sales and inventory targets.
• Monitor oven baking, mixing, cutting, cooling, and packaging line performance.
• Drive line uptime through proactive maintenance coordination and downtime reduction.
• Ensure compliance with food safety and regulatory requirements.
• Lead root-cause analyses and implement corrective actions for quality issues.
• Supervise production supervisors and operators across shifts.
• Promote hygiene, PPE usage, and safety on the factory floor.

Koon Brother Sdn. Bhd. is seeking an experienced Assistant Factory Manager to join our dynamic team in Muar, Johor. In this full-time role, you will play a vital part in overseeing the daily operations and optimizing the productivity of our manufacturing facility.

What you'll be doing

• Oversee daily biscuit production operations, ensuring adherence to recipe, weight, size, texture, and packaging standards.


• Coordinate with the planning department to align production schedules with sales and inventory targets.


• Monitor and optimize oven baking, mixing, cutting, cooling, and packaging line performance.


• Reduce downtime through proactive line management and coordination with maintenance.


• Ensure compliance with HACCP, GMP, ISO, and other food safety standards specific to baked goods.


• Work closely with QA/QC teams to address deviations, complaints, or non-conformities related to taste, appearance, or shelf life.


• Lead root cause analyses on quality issues and implement corrective actions.


• Supervise and mentor production supervisors, line leaders, and factory workers across shifts.


• Ensure adequate staffing and training for specialized biscuit processing equipment.


• Promote teamwork, accountability, and high hygiene standards on the factory floor.


• Maintain a safe working environment in line with OSHA and local safety regulations.


• Conduct regular safety briefings and ensure proper handling of food ingredients and hot machinery.


• Encourage adherence to personal protective equipment (PPE) and cleanliness.


• Monitor usage of flour, sugar, oil, flavorings, and other ingredients to ensure minimal waste.


• Work with warehouse and procurement to ensure timely material supply and FIFO usage.


• Identify and reduce product rejections and scrap through process improvements.


• Maintain production logs, batch records, downtime analysis, and efficiency reports.


• Assist in preparing reports for audits, quality inspections, and management reviews.


• Track machine maintenance logs and production KPIs.


• Support the introduction of new machinery or automation for biscuit production and packaging.


• Contribute to continuous improvement efforts (Kaizen, Lean, Six Sigma) specific to biscuit production.


• Stay updated on technological advancements in the baked goods/FMCG sector.

What we're looking for

• At least 5 years in food manufacturing, with hands-on exposure to biscuit or baked goods production.


• Familiarity with biscuit ovens, mixers, rotary moulders, wire cutters, and packaging lines.


• Understanding of food-grade materials handling and allergen controls.


• Strong grasp of hygiene standards and food regulatory requirements.


• Leadership and people management.


• Problem-solving and process troubleshooting.


• Factory floor-based role, requiring regular presence on production lines.


• Shift work or extended hours may be necessary based on production schedules.
