Job summary

Sunway Sanctuary is seeking a kitchen assistant to support cold kitchen and Western dish production. You will prepare salads, dressings, and various cold items, and assist in Western dishes from grilling to pasta, ensuring quality, portion control, and hygiene.

The role requires 2–3 years in cold kitchen or Western cuisine, with a valid Food Handler Certificate and a readiness to work shifts, weekends, and public holidays.

Qualifications

• Certificate or Diploma in Culinary Arts or related field (added advantage).
• Valid Food Handler Certificate.
• 2–3 years of experience in cold kitchen, Western cuisine, or a similar role.
• Knowledge of Western cuisine, cold kitchen prep, food handling, portion control.
• Knowledge of food safety, HACCP and proper food storage.
• Physically fit, detail-oriented, and able to work in a fast-paced kitchen.
• Willing to work shifts, weekends and public holidays.

Responsibilities

• Assist in the preparation, cooking, and presentation of cold kitchen and Western dishes according to recipes and standards.
• Prepare salads, sandwiches, appetizers, cold cuts, dressings, sauces, desserts, and other cold kitchen items.
• Assist in preparing Western dishes including grilled items, pasta, vegetables, and soups.
• Ensure all food preparation and cooking meet quality, presentation, portion control, hygiene, and food safety standards.
• Assist the Chef de Partie and Sous Chef in daily kitchen operations, mise en place, and production planning.
• Maintain proper storage, labelling, and stock rotation (FIFO).
• Ensure all kitchen equipment, utensils, and workstations are clean, sanitised, and maintained.
• Perform any other duties assigned by Executive/Sous/Chef de Partie or superior.
