Job summary

Mama Shelter Mexico City is opening a new pastry kitchen and seeks a Pastry Sous Chef to lead the launch and daily operations. You will drive creative dessert and pastry concepts aligned with the hotel’s concept and seasonal offerings.

You will mentor the pastry team, ensure top quality and food safety, manage inventory and costs, and collaborate with culinary, restaurant, banquet, and bar teams to create memorable guest experiences during this exciting opening phase.

Qualifications

• Previous experience as a Pastry Sous Chef or Senior Pastry Chef in luxury hotels, high-end restaurants, or lifestyle brands.
• Strong knowledge of pastry production, bakery operations, plated desserts, and contemporary techniques.
• Experience leading culinary teams and driving pastry concepts.
• Experience with cost control, purchasing, and inventory management.
• Opening experience is a plus with entrepreneurial mindset.

Responsibilities

• Support the launch and daily operation of the pastry kitchen.
• Assist in developing creative dessert, bakery, and pastry menus aligned with hotel concept and seasonal offerings.
• Ensure consistent quality, presentation, and flavor across all pastry products.
• Lead, mentor, and inspire pastry team members and foster a collaborative kitchen culture.
• Maintain high standards of food safety, hygiene, and sanitation.
• Manage inventory, ordering, and cost controls while minimizing waste.
• Collaborate with culinary, restaurant, banquet, and bar teams to create guest experiences.
• Participate in menu tastings, events, promotions, and seasonal activations.
• Support recruitment, onboarding, and training during the hotel opening phase.
• Foster a culture of creativity, excellence, and continuous improvement.
